Just returned from a spur of the moment trip to Vegas with the fam. We actually didn't spend much time on the strip. Instead, we visited Valley of Fire State Park, Red Rock Canyon, Lake Mead, Hoover Dam, and stayed at beautiful Loews Hotel in Lake Las Vegas. I packed mostly healthy meals & snacks - raw veggies, fruits, oatmeal, peanuts, and sandwiches. This way, we could justify eating at 2 yummilicious restaurants and splurging on a few chocolate-y treats. Pictures & a more detailed post will be uploaded tomorrow. Too exhausted after a 5 hour drive home. Although I only drove the last 2 hours, being cooped up in the car for that long is tiring. No work tomorrow in honor of President's Day. Hooray!!
Tomorrow's Plan
- Early morning walk
- Brunch at 6ix Park Grill (groupon deal!). Looking forward to their famous omelet station where I plan on ordering a jam-packed veggie omelet.
- Grocery store run to load up fruits & veggies
- Prepare homemade choco/pb granola bars
- Roast cauliflower
- Upload pics/post
- Afternoon workout (run/kickboxing)
- Relax!!
